Our pecorino are all aged in an underground cave where the cheese, in order to enhance and exalt its quality distinctive, it is stored from 90 to 120 days and aged in barrique, in a small cellar, having the same underground location.
The aged forms, in order to flavor them, are kept for another 60 to 90 days in oak barrels, containing, depending on the chosen aroma: olive leaves and rosemary. In this way our cheese becomes a “CELLAR TREASURE“.
